Kraeuterplinsen mit Quark [Quark Pancakes with Herbs]

The tradional dish calls for leftover potatoes and Quark, but this recipe has substitiuted whole wheat flour in place of the potatoes. The simple ingredients and quick preparation make this an appealing meal for the end of a busy day.

Quark Pancakes with Herbs

Serves 2

Ingredients: 

about 1 cup Quark

4 tablespoons wholewheat flour

2 eggs, separated

2 tablespoons mixed, chopped herbs

salt, pepper

cooking oil

Directions: 

Place the Quark in a cheesecloth-lined sieve and allow to drain. Beat together the flour and egg yolks. Stir in the well-drained Quark, along with herbs. Add salt and pepper to taste. Beat the egg whites until stiff and mix with the other ingredients.

In a shallow frying pan, heat the cooking oil. Drop about 1 tablespoon of Quark mixture into pan, press flat with spatula and brown on both sides (you may need to add more cooking oil before turning). Keep pancakes in a warm oven while continuing to cook additional pancakes. Serve immediately.

For an elegant, light meal, dress up these pancakes with creme fraiche and caviar and serve with a fresh, green salad.
