Bauernfrühstück
(Farmer's Breakfast)

A typical German breakfast today might be made up of bread and small rolls (called either Brötchen or Semmeln depending on where you live) topped with butter, ham, cheese or jam. The meal is tasty, but designed for a quick start. However, when time allows, Germans are fond of this delicious, hearty dish, perhaps the German equivalent of the American steak and eggs breakfast. Enjoy this simple recipe for brunch on a slow-moving weekend morning.

Serves 3-4

Ingredients:

4 medium potatoes
4 strips bacon, crumbled
3 eggs 3 tablespoons milk
1/2 teaspoon salt
1 cup cooked ham, cubed
2 medium tomatoes
1 tablespoon chopped chives
Directions:

Boil potatoes until soft, rinse under cold water to stop cooking. Peel potatoes and set aside to cool. Meanwhile, in a large frying pan cook bacon until crisp. Slice the cooled potatoes and add to bacon. Cook until lightly browned. Meanwhile beat eggs with milk and salt, then stir in the cubed ham. Cut the tomatoes into thin wedges and add to the egg mixture. Pour the egg mixture over the potatoes in the frying pan. Cook until the eggs are set.
Sprinkle with chopped chives and serve at once.
